What is a Scoville unit?
The Scoville scale measures capsaicin — the compound that makes a pepper hot. A jalapeno sits in the low thousands; a bhut jolokia ghost pepper runs close to a million. Ranges vary with each pepper crop, which is why these are given as ranges rather than single numbers.
